Taking advantage of those abundant summer berries, this gluten free recipe is quick and easy. Berries provide a wealth of antioxidants, and are in season in the early summer so they will be at their peak freshness; not to mention less expensive than when off-season. Feel free to use your favorite combinations, and your favorite pack of Baby or Toddler Mum-Mums.
- 1 pack Strawberry Toddler Mum-Mum, crushed
- 3/4 mixed berries, washed and dried
- 1 and ½ tablespoon gluten free rolled oats
- 1 teaspoon unsalted butter, or non-dairy equivalent
- Pinch of cinnamon
Preheat oven to 375 degrees. Using a rolling pin, crush unopened pack of Toddler Mum-Mum into a flour-like consistency. In a small bowl, combine oats, Mum-Mum and cinnamon. Using your hands or a fork, cut in the butter so it is evenly dispersed throughout dry mixture. Split berries into 2 souffle cups, then sprinkle each with half of the dry mix. Bake for 25 minutes or until golden.
